Course info
New food laws introduced in New South Wales require certain food businesses in the hospitality and retail food sector to appoint at least one trained Food Safety Supervisor (FSS).
It applies to restaurants, cafes, takeaway shops, caterers, mobile caterers, bakeries, pubs, clubs, hotels, temporary premises, mobile food vendors and supermarkets hot food sales.
The Online NSW Food Safety Supervisor (NSW FSS) course covers the two nationally competency titles - Follow Workplace Hygiene procedures (SITXOHS002A) and Implement Food Safety procedures (SITXFSA001A).
This course can be completed within 8 hrs or less. You will be issued with a NSW Food Safety Supervisor certificate (valid for five years) and Statement of Attainment.
Course Entry Requirements
You must have completed and been found competent in the unit SITXOHS002A Follow workplace hygiene procedures prior to commencing SITXFSA001A Implement food safety procedures course. Both of these units have been packaged together so you may enrol in one course.
A project and a workplace demonstration is required to complete this course.

The completion of the following courses is recognised as the qualification of Food Safety Supervisor for both the Hospitality and Retail industries:
- SITOHS001A Follow workplace hygiene procedures
- SITXFSA001A Implement food safety procedures
This unit applies to all hospitality and catering enterprises where food is prepared and served, including hotels and restaurants, cafeterias/kiosks/canteens/cafes/gourmet food shops, educational institutions, health establishments, defence forces, corrective services, in-flight catering, other transport catering, events catering and private catering.
What will I learn?
The unit of competency will teach you to:
- Identify food safety critical control points and hazards.
- Implement procedures for food safety.
This unit refers to the required food safety procedures and is based on the HACCP method (Hazard Analysis and Critical Control Points) of implementing a food safety plan but can also be customised to other systems.
This unit underpins all other units involving the preparation, cooking, serving, storage, packaging and transportation of foods as well as the handling and storage of commodities and other supplies.
This course includes online assessments and the requirement for the practical demonstration of the required knowledge and skills on three separate occasions. The practical demonstration/s must be observed by a suitably qualified person.
